Greek Watermelon Feta Salad with Basil Vinaigrette

A refreshing summer salad combining juicy watermelon, tangy feta, and aromatic basil vinaigrette, perfect for warm days.

  • 4 cups cubed watermelon
  • 2 cups cherry tomatoes, halved
  • 2 Persian cucumbers, diced
  • 1 cup kalamata olives, pitted
  • 8 ounces feta cheese, cubed
  • 1/4 cup extra virgin olive oil
  • 3 tablespoons balsamic vinegar
  • Juice from 1 lemon
  • 2 teaspoons honey
  • 1 cup fresh basil, chopped
  • 2 tablespoons fresh chopped chives
  • Flaky salt and black pepper to taste

Instructions

  1. Prep your ingredients: Wash the produce thoroughly. Chop the watermelon into bite-sized cubes, slice the cherry tomatoes in half, and dice the cucumbers.
  2. Create the vinaigrette: In a mixing bowl, whisk together olive oil, balsamic vinegar, lemon juice, honey, and a pinch of salt and pepper. Add chopped basil and chives.
  3. Combine the salad: In a large mixing bowl, gently combine watermelon, tomatoes, cucumbers, and olives. Pour the vinaigrette over and toss gently.
  4. Add the feta: Carefully fold in cubed feta cheese.
  5. Plate and enjoy: Transfer to a serving bowl, drizzle with more vinaigrette, and sprinkle with flaky salt and black pepper.
