Greek Yogurt Rotisserie Chicken Salad

A quick and delicious Greek Yogurt Rotisserie Chicken Salad packed with flavor and satisfying crunch.

  • 1 rotisserie chicken, shredded
  • 1 cup Greek yogurt
  • 1/4 cup celery, diced
  • 1/4 cup red onion, diced
  • 1/2 cup grapes, halved
  • 1/4 cup walnuts, chopped
  • 1 tablespoon Dijon mustard
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions

  1. Prep the chicken by removing the skin and shredding the meat.
  2. Combine the shredded chicken and Greek yogurt in a large mixing bowl.
  3. Chop the celery and red onion, and halve the grapes before adding them to the bowl.
  4. Toss in the walnuts, Dijon mustard, and lemon juice, then gently fold to mix.
  5. Season with salt and pepper according to your taste.
  6. Chill the salad in the fridge for at least 30 minutes to meld flavors.
  7. Serve on a colorful plate or bowl, garnished with extra walnuts or fresh herbs if desired.

Notes
