Grilled Peach and Burrata Salad

A refreshing salad combining sweet grilled peaches, creamy burrata, and a vibrant mix of greens, perfect for summer.

Ingredients

  • 4 ripe peaches or nectarines
  • 1 ball burrata cheese
  • 68 cups mixed greens
  • ¼ cup olive oil
  • 1 Tbsp red wine vinegar
  • 1 tsp honey
  • Fresh herbs (basil, dill, oregano)
  • ¼ cup pistachios (or walnuts/almonds)
  • ⅓ cup chopped tomatoes

Instructions

  1. Preheat the grill to medium heat.
  2. Prepare the peaches by cutting them in half and removing the pit.
  3. Grill the peach halves cut-side down for about 4-5 minutes until grill marks appear.
  4. Make the dressing by whisking together olive oil, red wine vinegar, and honey.
  5. Assemble the salad in a large bowl with mixed greens, grilled peaches, chopped tomatoes, and pistachios.
  6. Add torn burrata pieces to the salad.
  7. Drizzle dressing over the salad and toss gently.
  8. Serve on a colorful serving dish or individual bowls with fresh herbs on top.

Notes

This salad is versatile; add grilled chicken or shrimp for protein, or skip the burrata for a vegan version.
