Greek Yogurt Pumpkin Muffins

Delicious and moist pumpkin muffins made with Greek yogurt, perfect for fall!

  • 1 3/4 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 2 tsp pumpkin pie spice
  • 2 large eggs
  • 1 cup pumpkin puree
  • 3/4 cup brown sugar
  • 1/2 cup vegetable oil
  • 1/4 cup milk
  • 1 tsp vanilla extract
  • 3/4 cup Greek yogurt

Instructions

  1. Preheat the oven to 350°F (175°C) and grease or line a muffin tin with paper liners.
  2. Mix the dry ingredients: In a medium bowl, whisk together the flour, baking soda, baking powder, salt, and pumpkin pie spice.
  3. Blend the wet ingredients: In a large bowl, beat the eggs until frothy, then whisk in the pumpkin puree, brown sugar, vegetable oil, milk, vanilla extract, and Greek yogurt until smooth.
  4. Combine the wet and dry ingredients: Gradually fold the dry ingredients into the wet mixture until just combined.
  5. Distribute the batter into the muffin tin, filling each cup about 2/3 full.
  6. Bake for 18-20 minutes or until a toothpick comes out clean.
  7. Cool the muffins in the tin for 5 minutes before transferring to a wire rack.

Notes

These muffins can be stored in an airtight container at room temperature for 3 days or frozen for up to 3 months.
