Cottage Cheese Pumpkin Muffins

  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 teaspoons pumpkin pie spice
  • 2 large eggs
  • 1 cup pumpkin purée
  • 1 cup cottage cheese, blended smooth
  • 3/4 cup brown sugar
  • 1/4 cup vegetable oil
  • 1 teaspoon vanilla

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Prepare a standard muffin tin by greasing or lining with muffin liners.
  3. Mix together the flour, baking soda, baking powder, salt, and pumpkin pie spice in a medium bowl.
  4. Blend the cottage cheese in a blender until smooth.
  5. Combine the eggs, pumpkin purée, blended cottage cheese, brown sugar, vegetable oil, and vanilla in a large mixing bowl until well combined.
  6. Mix the dry ingredients into the wet ingredients gradually, stirring until just combined.
  7. Fill each muffin cup about 3/4 full with batter.
  8. Bake for 18-20 minutes or until a toothpick comes out clean.
  9. Cool in the pan for a few minutes before transferring to a wire rack.

Notes

For variations, consider adding chocolate chips, nuts, or dried fruit. Store leftovers in an airtight container for up to 3 days or freeze for up to 3 months.
