High-Protein Pumpkin Muffins

Delicious high-protein pumpkin muffins, perfect for fall! Ideal for breakfast, an afternoon snack, or a healthy dessert.

  • 1 cup all-purpose flour
  • 1 cup vanilla protein powder
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 2 tsp pumpkin pie spice
  • 2 eggs
  • 1 cup pumpkin puree
  • 3/4 cup Greek yogurt
  • 1/3 cup maple syrup
  • 1/4 cup milk
  • 1 tsp vanilla

Instructions

  1. Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease it well.
  2. Combine in a large mixing bowl, whisk together the all-purpose flour, vanilla protein powder, baking soda, baking powder, salt, and pumpkin pie spice.
  3. Mix in a separate bowl, whisk together the eggs, pumpkin puree, Greek yogurt, maple syrup, milk, and vanilla until smooth.
  4. Combine the wet mixture into the dry flour mixture. Gently fold everything together until just combined.
  5. Scoop each muffin liner about three-quarters full. Bake in the preheated oven for 18-20 minutes.
  6. Cool the muffins for a few minutes in the tin and then transfer them to a wire rack to cool completely.

Notes

These muffins are versatile; try adding dark chocolate chips or a mashed banana for variations.
