Crockpot Chicken Noodle Soup

A comforting and hearty chicken noodle soup made effortlessly in a crockpot, filled with tender chicken, vibrant vegetables, and egg noodles.

  • 2 lbs boneless skinless chicken breasts
  • 8 cups chicken broth
  • 3 carrots, sliced
  • 3 celery stalks, sliced
  • 1 onion, diced
  • 3 garlic cloves, minced
  • 2 tsp Italian seasoning
  • 8 oz egg noodles
  • Fresh parsley (for garnish)
  • Salt and pepper (to taste)

Instructions

  1. Prep the veggies: Wash and slice the carrots and celery. Dice the onion and mince the garlic.
  2. Layer it in the crockpot: Place the chicken breasts at the bottom, then scatter the carrots, celery, onion, and garlic over the chicken.
  3. Season it up: Sprinkle in the Italian seasoning, salt, and pepper. Pour the chicken broth over everything.
  4. Cook to perfection: Set your slow cooker to low and let it cook for 6-8 hours (or on high for 4 hours).
  5. Add the noodles: About 30 minutes before serving, stir in the egg noodles.
  6. Taste and adjust: Check the seasoning and adjust as needed.

Notes

This soup tastes even better the next day. If you have leftovers, store them in an airtight container in the fridge.
