Crockpot Chipotle Chicken

A warming, zesty Crockpot Chipotle Chicken with tender chicken thighs in a smoky, spicy sauce, perfect for burrito bowls, tacos, or served on its own.

Ingredients

  • 2 lbs Chicken Thighs
  • 2 Chipotle Peppers in Adobo, Minced
  • 1/2 Cup Tomato Sauce
  • 2 Garlic Cloves, Minced
  • 1 Tbsp Honey
  • 1 Tsp Cumin

Instructions

  1. Prepare Your Chicken: Rinse the chicken thighs under cold water and pat them dry with paper towels.
  2. Mix Your Sauce: In a bowl, combine the minced chipotle peppers, tomato sauce, minced garlic, honey, and cumin. Stir until well mixed.
  3. Layer In Your Crockpot: Place the chicken thighs in the bottom of your crockpot and pour the sauce over them.
  4. Slow Cook Time: Cover and set your crockpot to cook on low for 6-8 hours or on high for 4 hours.
  5. Shred and Serve: Once finished cooking, remove the chicken and shred it, then return it to the crockpot and stir it into the sauce.

Notes

Feel free to adjust the spice level and try different serving suggestions! Leftovers are great in wraps or salads.
