Juicy Watermelon Cucumber Feta Salad

A refreshing summer salad combining sweet watermelon, crunchy cucumber, and tangy feta cheese, perfect for warm days.

Ingredients

  • 6 cups Watermelon, seeded and cubed
  • 1 English cucumber, chopped
  • 6 oz Feta cheese, cubed
  • Handful of Fresh mint leaves, chopped
  • 1 Fresh lime, zest and juice
  • Sea salt flakes, to taste
  • Fresh ground black pepper, to taste

Instructions

  1. Start with that gorgeous watermelon! Cut it in half and then slice it into thick wedges, removing the rind. Take each wedge and cut it into cubes.
  2. Grab your English cucumber, and chop it up! No need to peel it.
  3. Now comes the feta! You can either cube it or crumble it—whichever you prefer.
  4. Gently chop your fresh mint leaves. We want those beautiful green flecks to shine in your salad.
  5. Zest and juice your lime! The zest adds brightness, while the juice ties everything together.
  6. Add a pinch of sea salt flakes and fresh ground black pepper to taste.
  7. Serve in a large bowl or individual servings. Garnish with extra mint leaves on top!

Notes

Best served fresh; if prepping ahead, store watermelon and cucumber separately from feta and mint.
