Juicy Watermelon Feta Salad

A vibrant, refreshing dish that balances the sweet juiciness of ripe watermelon with the salty tang of feta cheese, perfect for summer gatherings.

  • 6 cups Watermelon, seeded and cubed
  • 1 English Cucumber, chopped
  • 6 oz Feta Cheese, cubed
  • Handful Fresh Mint Leaves, chopped
  • 1 Fresh Lime, zest and juice
  • Sea Salt Flakes and Fresh Ground Black Pepper (to taste)

Instructions

  1. Prepare Your Ingredients: Make sure all your ingredients are prepped and ready. Cube the watermelon, chop the cucumber, and crumble the feta cheese. Rinse your mint leaves.
  2. Combine the Watermelon and Cucumber: In a large bowl, add the cubed watermelon and chopped cucumber, and toss gently.
  3. Crumble in the Feta Cheese: Fold in the feta cheese gently to keep the cubes intact while mixing.
  4. Add Fresh Mint and Lime: Sprinkle the chopped mint and add the zest and juice of the lime, tossing the salad again.
  5. Season with Salt and Pepper: Add sea salt flakes and ground black pepper to taste, then toss again.
  6. Taste Test: Taste the salad and adjust lime juice or seasoning if necessary.

Notes

Serve chilled for a refreshing treat. Garnish with extra mint leaves. This salad can be made ahead of time; however, consume it within a day or two for the best flavor.
