Lemon Pepper Chicken & Broccoli

A vibrant and crunchy dish featuring lemon pepper chicken and fresh broccoli served over quinoa, capturing sunny flavors perfect for any night.

  • 2 lbs chicken breasts
  • 2 tbsp olive oil
  • 2 lemons
  • 2 tsp lemon pepper seasoning
  • 3 cups broccoli
  • 2 cups quinoa

Instructions

  1. Rinse the quinoa in a fine mesh strainer under cold water. Combine quinoa with water in a medium saucepan and bring to a boil. Lower heat, cover, and simmer for about 15 minutes. Fluff with a fork.
  2. Pat dry the chicken breasts with paper towels. Drizzle with olive oil and sprinkle with lemon pepper seasoning. Marinate for about 10 minutes.
  3. Heat a skillet over medium-high heat. Add olive oil and then broccoli. Season and cook for about 5-7 minutes until tender yet crispy.
  4. Add the chicken to the skillet, cooking for about 7-8 minutes per side until the internal temperature reaches 165°F (75°C).
  5. Squeeze the juice of both lemons over the chicken after cooking. Let it rest for a few minutes before slicing.
  6. Layer quinoa, sautéed broccoli, and chicken in a bowl or plate. Garnish with lemon slices if desired.

Notes

For added flavor, cook quinoa in broth instead of water. Let chicken marinate longer for better taste. Serve immediately for best texture.
