Loaded Sushi Rice Bowls

A fun and colorful dish combining sushi rice with crab sticks, fresh veggies, and a spicy mayo twist.

Ingredients

  • Cooked Sushi Rice (2 cups)
  • Crab Sticks (6-8 sticks)
  • Cucumber (1, sliced thin)
  • Spicy Mayo (1/2 cup)
  • Nori Sheets (optional)
  • Sesame seeds (optional)
  • Green onions, sliced (optional)
  • Pickled ginger (optional)

Instructions

  1. Prepare the Sushi Rice: Cook the rice according to the package instructions. Once it’s done, allow it to cool slightly. Add a splash of rice vinegar mixed with a pinch of sugar and salt.
  2. Chop the Veggies: Thinly slice your cucumber.
  3. Prepare the Crab Sticks: Slice crab sticks into bite-sized pieces.
  4. Mix the Spicy Mayo: In a small bowl, mix the mayonnaise and sriracha.
  5. Build Your Bowls: Start with a scoop of sushi rice in each bowl, then layer with crab sticks, cucumber slices, and drizzle spicy mayo on top.
  6. Add Toppings: Sprinkle sesame seeds or sliced green onions and add nori strips if desired.
  7. Serve and Enjoy: Serve immediately while the rice is warm.

Notes

Feel free to customize with additional toppings like diced mango or marinated tofu for a vegan option.
