  • 2 medium zucchini, sliced
  • 1 cup shredded cheese (such as mozzarella or cheddar)
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1/2 teaspoon Italian seasoning or oregano (optional)

Instructions

  1. Preheat Your Oven: Preheat your oven to 375°F (190°C).
  2. Prep the Chicken: In a large skillet, heat one tablespoon of olive oil over medium heat. Add the diced chicken breast, season with salt, pepper, garlic powder, and onion powder. Sauté until cooked through (about 5–7 minutes).
  3. Slice Up the Zucchini: While the chicken is cooking, slice the zucchini into half-moons or rounds.
  4. Combine Ingredients: In the same skillet, add the sliced zucchini with the remaining tablespoon of olive oil, season with a bit of salt and pepper, and sauté for about 3–4 minutes.
  5. Assemble the Bake: In a large baking dish, layer the sautéed zucchini and then spread the cooked chicken evenly over the top. Sprinkle the shredded cheese generously over everything.
  6. Bake It Up: Place the baking dish in the preheated oven and bake for about 20–25 minutes.

Notes

For an extra crispy topping, switch to broil for the last 2–3 minutes.
