  • 2 cups thinly sliced mangos (about 2 large, firm mangos)
  • 1 cup thinly sliced carrots (about 2 medium carrots)
  • 1 cup thinly sliced purple cabbage
  • 1/3 cup chopped fresh cilantro
  • 1/4 cup chopped scallions
  • 2 tablespoons freshly squeezed lime juice
  • 1 tablespoon honey or agave syrup
  • 2 teaspoons rice vinegar

Instructions

  1. Prep the veggies: Start by washing and slicing your vegetables and mango.
  2. Combine the cabbage and carrots: In a large bowl, gently toss together the angel hair cabbage, sliced carrots, and purple cabbage.
  3. Add the mangos: Next, add those luscious slices of mango to the colorful mix.
  4. Fresh herbs: Sprinkle in the chopped cilantro and scallions.
  5. Make the dressing: In a separate small bowl, whisk together the lime juice, honey (or agave), and rice vinegar.
  6. Dress the slaw: Pour the dressing over your slaw mix and toss until beautifully coated.
  7. Let it marinate: Allow the slaw to sit for about 10-15 minutes before serving.
  8. Serve your creation: You can either serve it right away or keep it in the fridge for up to an hour.
