Mediterranean Chopped Salad with Grilled Chicken

  • 4 Chicken Thighs (boneless, skinless)
  • 4.25 oz Mediterranean Starter Sauce (Mesa de Vida)
  • 1 Head of Romaine Lettuce (chopped)
  • 1/2 cup Red Onion (diced)
  • 1 cup Mixed Olives (pitted and halved)
  • 1 cup Cherry Tomatoes (quartered)
  • 1 cup Cucumber (diced)
  • 1/2 cup Feta (crumbled)
  • 2 tbsp Parsley (fresh, chopped)
  • 2 tbsp Olive Oil
  • 1/2 cup Avocado Oil Mayonnaise
  • 2 tbsp Lemon Juice
  • 1/4 cup Olive Oil
  • 1 tsp Salt

Instructions

  1. Fire up the grill by preheating it over medium-high heat.
  2. Marinate the chicken thighs with Mediterranean starter sauce in a bowl.
  3. Grill the marinated chicken for about 6-7 minutes per side, until cooked through.
  4. Chop the romaine, red onion, cucumber, and cherry tomatoes into uniform pieces.
  5. Mix the dressing by combining avocado oil mayonnaise, lemon juice, and olive oil in a bowl.
  6. Assemble the salad by tossing together the lettuce, red onion, cucumbers, tomatoes, and olives; top with feta and parsley.
  7. Slice the grilled chicken after resting and place it on top of the salad.
  8. Serve with the dressing drizzled on top and enjoy!

Notes

For added flavor, consider serving with warm pita bread or hummus. You can also sprinkle pine nuts or sliced almonds for extra crunch.
