Crunchy Mediterranean Salad

Ingredients

  • 2 cups tomato, finely diced
  • 1/4 cup red onion, finely diced
  • 1 tablespoon parsley, chopped
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons lemon juice (or red wine vinegar)
  • Salt and pepper to taste

Instructions

  1. Prep your ingredients by chopping cucumbers, tomatoes, and red onion.
  2. Toss the diced cucumbers, tomatoes, and red onions in a large mixing bowl.
  3. Add the finely chopped parsley.
  4. Drizzle in the olive oil and lemon juice (or vinegar).
