Mediterranean Tzatziki Chicken Salad

A vibrant salad combining shredded chicken with a creamy tzatziki dressing and fresh veggies for a crunchy delight.

  • 2 cups cooked chicken, shredded
  • 1 cup Greek yogurt
  • 1 cucumber, diced
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon dried dill
  • Salt and pepper to taste

Instructions

  1. Prep the Chicken: If you haven’t yet, cook your chicken! You can bake it in the oven at 375°F for about 25-30 minutes or until fully cooked. Shred it using two forks or a stand mixer with the paddle attachment.
  2. Chop the Veggies: Grab your cucumber and finely dice it. If you prefer additional flavor, sprinkle a little sea salt on the diced cucumber and let it sit for 5-10 minutes.
  3. Mix the Tzatziki Base: In a large mixing bowl, combine the Greek yogurt, minced garlic, olive oil, lemon juice, and dried dill. Mix well until it’s creamy and all the ingredients are incorporated.
  4. Combine the Ingredients: Add the shredded chicken and diced cucumber to the tzatziki mixture. Gently fold everything together.
  5. Season to Perfection: Taste your salad and season it with salt and pepper as needed.
  6. Serve it Up: Garnish with extra dill or a sprinkle of crushed red pepper if you’re feeling spicy!

Notes

Letting it sit for 15-30 minutes before serving can help flavors meld beautifully.
