Melon Mosaic Salad with Hot Honey Vinaigrette

A colorful summer salad featuring fresh melons, crisp veggies, and a zingy Hot Honey Vinaigrette.

  • 2 cups Watermelon, cubed
  • 2 cups Cantaloupe, cubed
  • 1 medium Cucumber, diced
  • 1 Avocado, diced
  • 1 cup Cherry Tomatoes, halved
  • 1/2 cup Feta Cheese, crumbled
  • 2 tablespoons Chives, chopped
  • 1/4 cup Mint, chopped
  • 1/4 cup Basil, chopped
  • 3 tablespoons Hot Honey
  • 2 tablespoons Champagne Vinegar
  • 2 tablespoons Fresh Lemon Juice
  • 1 clove Garlic, minced
  • 3 tablespoons Extra Virgin Olive Oil
  • Black Pepper, to taste

Instructions

  1. Prep the Ingredients: Start by washing and drying all your produce.
  2. Cube the Melons: Slice the watermelon and cantaloupe into cubes.
  3. Chop the Veggies: Dice the cucumber and slice the cherry tomatoes in half.
  4. Prepare the Avocado: Cut the avocado in half, remove the pit, dice it into cubes.
  5. Assemble the Salad: In a bowl, combine the cubed watermelon, cantaloupe, cucumber, avocado, and cherry tomatoes.
  6. Add the Feta and Herbs: Crumble the feta cheese over the salad and sprinkle with herbs.
  7. Make the Vinaigrette: Whisk together hot honey, champagne vinegar, lemon juice, minced garlic, and EVOO.
  8. Dress and Toss: Drizzle the vinaigrette over the salad and gently toss together.
  9. Serve It Up: Serve the salad immediately in beautiful bowls or on a platter.

Notes

You can prep ingredients ahead of time but add dressing right before serving to prevent sogginess.
