  • 1 cup of crumbled feta cheese
  • 1/4 cup chopped fresh mint
  • Juice of 1 lime
  • 12 tablespoons honey or agave syrup (optional)
  • Pinch of salt and pepper

Instructions

  1. Prepare the Melon: Begin by choosing your melons. Use ripe fruit that yields slightly to pressure. For watermelon, a deep spot with golden hues often indicates ripeness. For cantaloupe and honeydew, use your senses; smell the stem end for sweetness. Cube the flesh into bite-sized pieces.
  2. Crumble the Feta: Crumble the feta cheese over the cubed melon.
  3. Freshen it Up: Chop the fresh mint leaves, gently bruising them before adding to the mix.
  4. Dress It Up: In a small bowl, whisk together lime juice, optional honey or agave, and a pinch of salt and pepper. Pour this dressing over the salad.
  5. Toss and Serve: Gently toss the salad using a large spoon and serve in a clear bowl or on a large platter to showcase the colors.

Notes
