Pumpkin Maple Donut Muffins

These delightful Pumpkin Maple Donut Muffins bring together the flavors of fall with a moist crumb and sweet glaze.

  • 1 3/4 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 2 tsp pumpkin pie spice
  • 2 large eggs
  • 1 cup pumpkin puree
  • 3/4 cup brown sugar
  • 1/2 cup vegetable oil
  • 1/4 cup milk
  • 1 tsp vanilla extract
  • 1/2 tsp nutmeg
  • 1 cup powdered sugar
  • 2 tbsp maple syrup

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Prepare the muffin tin by greasing it or lining it with paper liners.
  3. Combine the flour, baking soda, baking powder, salt, pumpkin pie spice, and nutmeg in a large bowl.
  4. Mix the eggs, pumpkin puree, brown sugar, vegetable oil, milk, and vanilla extract in another bowl until well combined.
  5. Make a well in the center of the dry ingredients and pour in the pumpkin mixture, folding gently until combined.
  6. Fill each muffin cup about two-thirds full with batter.
  7. Bake for 18-20 minutes, or until a toothpick comes out clean.
  8. Cool the muffins in the tin for 5 minutes before transferring to a wire rack.
  9. Prepare the glaze by whisking the powdered sugar and maple syrup until smooth, then drizzle over the warm muffins.
  10. Serve them warm or at room temperature.

Notes

These muffins are best enjoyed fresh but can be stored in an airtight container at room temperature for up to 3 days.
