Ultimate Black Bean Burrito Bowls

These delicious Black Bean Burrito Bowls combine crunch, color, and comfort, making them a vibrant and satisfying meal.

  • 2 cans black beans, drained
  • 2 cups cooked brown rice
  • 1 cup corn
  • 1 cup salsa
  • 1 avocado, diced
  • 1/2 cup shredded cheddar cheese

Instructions

  1. Rinse the brown rice under cold water until the water runs clear. In a pot, combine 1 part rice to 2 parts water and a pinch of salt. Bring to a boil, then reduce to a simmer. Cover and let it cook for about 45-50 minutes until tender and fluffy.
  2. Drain and rinse the black beans in a colander. This helps get rid of some of that canning liquid, giving you a cleaner taste. In a small saucepan over medium heat, add the black beans with a splash of water. Heat for about 5-7 minutes, stirring occasionally. Add some cumin and chili powder for an extra flavor punch if you like!
  3. In serving bowls, start with a generous scoop of brown rice, followed by the heated black beans.
  4. Next, pile on that sweet corn and a fun spoonful of salsa. Go wild — you can even create a salsa ‘lake’ right in the center of your bowl!
  5. Sprinkle the diced avocado and shredded cheddar cheese on top.
  6. Top your bowls with crushed tortilla chips or pumpkin seeds for that irresistible crunch.

Notes

For extra flavor, cook the rice in vegetable broth instead of water. To prevent the avocado from browning, squeeze a little lime juice over it before serving.
