Crunchy Chicken Quesadillas

Crispy, cheesy chicken quesadillas that are easy to make and perfect for dinner or as an appetizer.

Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup bell peppers, sliced
  • 1 cup onions, sliced
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • 4 large flour tortillas
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Sour cream and salsa for serving (optional)

Instructions

  1. Prep your ingredients by shredding chicken and slicing bell peppers and onions.
  2. Sauté the veggies in olive oil over medium heat for 5-7 minutes until tender.
  3. Mix in the shredded chicken and warm through for 2-3 minutes.
  4. Assemble the quesadillas by layering cheese, chicken mixture, and more cheese on half of a tortilla.
  5. Cook until golden and crispy on both sides, about 4-5 minutes per side.
  6. Repeat with remaining tortillas and serve with dipping sauces.
