Cinnamon Sugar Pumpkin Muffins

Delightfully spiced muffins perfect for the fall season, filled with the flavors of pumpkin and topped with a crunchy cinnamon sugar crust.

  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 2 tsp pumpkin pie spice
  • 2 large eggs
  • 1 cup pumpkin puree
  • 3/4 cup brown sugar
  • 1/2 cup vegetable oil
  • 1/4 cup milk
  • 1 tsp vanilla extract
  • 1/3 cup granulated sugar
  • 1 1/2 tsp cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C) and line your muffin tin with cute paper liners.
  2. Mix the dry ingredients: In a large mixing bowl, whisk together the flour, baking soda, baking powder, salt, and pumpkin pie spice.
  3. Combine the wet ingredients: In another bowl, whisk together the eggs, pumpkin puree, brown sugar, vegetable oil, milk, and vanilla extract until combined.
  4. Incorporate the dry mixture into the wet ingredients, stirring gently.
  5. Prepare the cinnamon sugar topping: In a small bowl, combine the granulated sugar and cinnamon.
  6. Fill the muffin tin: Using an ice cream scoop, fill each muffin liner about 2/3 full.
  7. Sprinkle the cinnamon sugar topping over each muffin.
  8. Bake for 18-22 minutes or until a toothpick comes out clean.
  9. Cool in the tin for a few minutes before transferring to a wire rack.

Notes

These muffins can be frozen for up to 3 months. Perfect for breakfast, dessert, or an afternoon snack!
