Ultimate Roasted Red Pepper Tortellini

A colorful, creamy, and utterly satisfying dish featuring tortellini tossed with a homemade roasted red pepper sauce.

  • 16 oz cheese tortellini (fresh, frozen, or dried)
  • 23 red bell peppers
  • 2 tbsp extra virgin olive oil
  • 23 cloves fresh garlic
  • Salt and pepper to taste
  • 1/4 cup grated Parmesan cheese
  • Fresh basil leaves (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Place peppers on a baking tray and drizzle with olive oil.
  2. Roast the peppers until skins are blistered, about 25-30 minutes. Let cool, then peel, seed, and blend with garlic, olive oil, salt, and pepper.
  3. Bring a large pot of salted water to a boil and cook tortellini according to package instructions (3-5 minutes for fresh, 6-8 for frozen).
  4. Drain the tortellini and mix with the roasted red pepper sauce in a large bowl.
  5. Plate the tortellini mixture, garnish with Parmesan and fresh basil, and drizzle with olive oil before serving.

Notes

For added crunch, garnish with toasted pine nuts. Pair with garlic bread or a fresh salad.
