Delicious and crispy Zucchini Garlic Bites, perfect for snacking or entertaining, combining fresh zucchini and zesty garlic with melted cheese.

  • 2 medium zucchinis, shredded
  • 2 cloves garlic, minced
  • 1/2 cup Parmesan cheese, grated
  • 1/4 cup fresh herbs (e.g., parsley, basil), chopped
  • 1/2 cup breadcrumbs
  • 1 egg
  • Salt and pepper to taste
  • Olive oil (for baking or air frying)
  • Marinara sauce (for serving)

Instructions

  1. Preheat the oven to 400°F (200°C) or the air fryer to 375°F (190°C).
  2. Prep the zucchinis by shredding them and squeezing out excess moisture.
  3. Mix the shredded zucchini, minced garlic, grated Parmesan, fresh herbs, breadcrumbs, egg, salt, and pepper together in a large bowl.
  4. Shape small patties or bites, about 2 inches in diameter, and place them on a lined baking sheet or air fryer basket.
  5. Drizzle the tops with olive oil.
  6. Bake for 20-25 minutes or air fry for 15-20 minutes, flipping halfway through.
  7. Set to cool for a few minutes before serving.

Notes

Serve with marinara sauce for dipping. You can also try adding other herbs or spices for variations.
