Crockpot Creamy Chicken Corn Chowder

A cozy and creamy chicken corn chowder perfect for chilly days.

  • 2 lbs boneless, skinless chicken breasts
  • 4 cups chicken broth
  • 2 cups corn (fresh, frozen, or canned)
  • 3 medium potatoes, diced
  • 1 onion, diced
  • 1 cup heavy cream
  • 4 oz cream cheese

Instructions

  1. Prepare the chicken by trimming excess fat and placing it in the bottom of the crockpot.
  2. Chop your onion and potatoes. Soak potatoes in water to prevent browning.
  3. Layer diced onions and potatoes on top of the chicken in the crockpot.
  4. Toss in corn and reserve a handful for garnishing.
  5. Pour chicken broth over the ingredients, ensuring everything is covered.
  6. Season with salt, pepper, and additional spices as desired.
  7. Let it cook on low for 6-8 hours or on high for 3-4 hours.
  8. Add heavy cream and cream cheese about 30 minutes before serving.
  9. Check the seasoning and adjust before serving.

Notes

Serve with crusty bread or crackers. This chowder can be frozen and reheated.
