Crockpot Fiesta Chicken

A flavorful crockpot dish bursting with fiesta spices, black beans, corn, and creamy goodness, perfect for a crowd.

Ingredients

  • 2 lbs boneless, skinless chicken breasts
  • 1 can black beans, rinsed and drained
  • 1 cup frozen corn
  • 1 can Rotel tomatoes
  • 8 oz cream cheese
  • 1 packet ranch seasoning

Instructions

  1. Place the chicken breasts in the bottom of your slow cooker.
  2. Add the black beans, sprinkling them evenly over the chicken.
  3. Toss in the frozen corn.
  4. Layer on the Rotel tomatoes, including the juicy goodness.
  5. Scoop in the cream cheese on top.
  6. Sprinkle the ranch seasoning over everything.
  7. Set your slow cooker on low for 6-8 hours or high for about 4 hours.
  8. Shred the chicken in the slow cooker and mix with the other ingredients.
