Healthy Sloppy Joe Bowls

A fresh, wholesome twist on the classic Sloppy Joe, packed with flavors from lean beef, sweet potatoes, and crunchy green beans.

Ingredients

  • 2 lbs lean ground beef
  • 1 cup tomato sauce
  • 1 tbsp Worcestershire sauce
  • 1 tbsp brown sugar
  • 2 cups roasted sweet potatoes
  • 2 cups green beans

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Dice your sweet potatoes into 1-inch cubes, and toss them with olive oil, salt, and pepper. Roast for about 25-30 minutes, flipping halfway through.
  3. In a large skillet over medium heat, add the ground beef and cook until browned, about 5-7 minutes.
  4. Once the beef is browned, stir in the tomato sauce, Worcestershire sauce, and brown sugar. Let it simmer for about 10 minutes.
  5. Bring a small pot of water to boil and blanch the green beans for about 3-4 minutes.
  6. Assemble your bowls with roasted sweet potatoes, Sloppy Joe mixture, and green beans on top.

Notes

Chef’s tips: Sprinkle sweet potatoes with paprika or cinnamon for extra flavor. You can swap ground beef with turkey or plant-based meat for lighter options.
