Ingredients

  • 2 lbs lean ground beef
  • 1 packet taco seasoning
  • 2 cups cooked rice
  • 1 can black beans, drained
  • 1 cup corn
  • Salsa
  • Shredded cheddar

Instructions

  1. Sauté the Beef in a large skillet over medium heat, breaking it up with a wooden spoon until browned, about 5-7 minutes.
  2. Season to perfection by adding the taco seasoning and 2/3 cup water, letting it simmer for 2-3 minutes.
  3. Prepare the rice, making sure it’s cooked and fluffy.
  4. Warm the beans and corn in a small saucepan over low heat.
  5. Assemble your bowls by starting with a scoop of rice as the base.
  6. Top with seasoned beef, followed by black beans and corn.
  7. Drizzle salsa on top and sprinkle with shredded cheese.
  8. Optional – Add crispy tortilla strips or crushed tortilla chips before serving for an extra crunch.
