Salted Caramel Pumpkin Muffins

Delicious and cozy salted caramel pumpkin muffins perfect for brunch or dessert.

  • 1 3/4 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 2 tsp pumpkin pie spice
  • 2 large eggs
  • 1 cup pumpkin puree
  • 3/4 cup brown sugar
  • 1/2 cup vegetable oil
  • 1/4 cup milk
  • 1 tsp vanilla extract
  • 1/3 cup thick salted caramel sauce

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease them lightly.
  2. Mix the flour, baking soda, baking powder, salt, and pumpkin pie spice in a large mixing bowl until well combined.
  3. Combine the eggs, pumpkin puree, brown sugar, vegetable oil, milk, and vanilla extract in another bowl until smooth.
  4. Marry the wet mixture into the dry mixture gently, folding until no dry flour remains.
  5. Add the salted caramel sauce and swirl it lightly through the batter.
  6. Fill the muffin tins about 2/3 full and top with a sprinkle of extra sea salt, if desired.
  7. Bake for 18-22 minutes, until a toothpick comes out clean.
  8. Cool in the tin for 5 minutes before transferring to a wire rack and drizzle with more salted caramel.

Notes

For variations, consider adding nuts, chocolate chips, or using coconut milk.
