Croissant Chicken Pot Pie

A comforting dish featuring flaky croissants encasing a creamy filling of tender chicken and vibrant vegetables.

  • 45 large Croissants
  • 2 cups Cooked Chicken, shredded
  • 2 cups Mixed Vegetables
  • 2 cups Cream Sauce
  • 1 small Onion, diced
  • 2 cloves Garlic, minced
  • 1 tablespoon Herbs, fresh thyme or parsley
  • Salt and Pepper, to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Sauté the onion in a skillet until soft, about 3-4 minutes. Add garlic and cook for an additional 30 seconds.
  3. Cook the chicken and mixed veggies together in the skillet for about 5 minutes.
  4. Make the cream sauce by adding heavy cream and chicken broth, simmering for about 5-7 minutes.
  5. Prepare the croissants by slicing them in half horizontally.
  6. Assemble the pie by layering the croissant halves in a baking dish, pouring the filling on top, and covering with remaining croissants.
  7. Bake for 25-30 minutes until golden brown and filling is bubbling.
  8. Serve after cooling for 5 minutes.

Notes

Feel free to experiment with different herbs or add cheese for extra flavor. Make ahead and refrigerate the filling for convenience.
