Perfect Peach and Blueberry Dessert

A vibrant and sweet summer dessert combining juicy peaches and blueberries with a flaky crust, perfect for warm weather gatherings.

  • 2 cups peaches, sliced
  • 2 cups blueberries
  • 1 cup sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1 pie crust (store-bought or homemade)
  • 2 tablespoons butter, cut into small pieces
  • 1 teaspoon cinnamon (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Combine the sliced peaches and blueberries in a mixing bowl.
  3. Add the sugar and gently toss to coat the fruit.
  4. Drizzle in the lemon juice and vanilla extract, then toss again.
  5. Roll out your pie crust and pour the fruit mixture into it.
  6. Dot the filling with pieces of butter and sprinkle with cinnamon if using.
  7. Bake for 30-35 minutes until the crust is golden brown and fruit is bubbly.
  8. Remove from the oven and allow to cool for about 15 minutes.
  9. Serve warm with vanilla ice cream or whipped cream.

Notes
