Ultimate Peach Galette

A delightful dessert that combines ripe peaches with a flaky, buttery crust, perfect for summer gatherings.

  • 1½ cups all-purpose flour
  • ½ cup butter (chilled and cut into ½-inch pieces)
  • 3 tbsp shortening (well-chilled)
  • 2 tbsp sugar
  • 1 pinch salt
  • Milk (for brushing)
  • Raw sugar (for sprinkling on the crust)
  • ½ cup sugar (for peach filling)
  • 3 tbsp flour (for thickening)
  • ½ tsp cinnamon
  • 45 ripe peaches (skinned and sliced)

Instructions

  1. Prepare the Dough: In a large bowl, combine the flour, sugar, and salt. Add in the cold butter and shortening. Using a pastry cutter or your hands, work the fats into the flour until it resembles coarse crumbs. Gradually add cold water (1 tablespoon at a time) until the dough holds together. Chill the dough in plastic wrap for about 30 minutes.
  2. Slice those Peaches: While the dough chills, prep the peaches. Combine the peaches, sugar, flour, and cinnamon in a medium bowl. Stir gently to coat.
  3. Roll it Out: Preheat your oven to 375°F (190°C). Roll out your chilled dough into a rough circle about 12 inches in diameter. Transfer to a baking sheet lined with parchment paper.
  4. Assemble the Galette: Spoon the peach mixture onto the center of the dough, leaving a 2-inch border. Fold the edges of the dough over the filling, pleating as you go. Brush the crust with milk and sprinkle with raw sugar.
  5. Bake it Up: Bake for about 30-35 minutes, or until the crust is golden brown and the peaches are bubbly.

Notes

Serve warm or at room temperature with vanilla ice cream or whipped cream for an elevated experience.
