Pumpkin Streusel Muffins

Delicious and cozy Pumpkin Streusel Muffins, perfect for the autumn season.

  • 1 3/4 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 2 tsp pumpkin pie spice
  • 2 large eggs
  • 1 cup pumpkin puree
  • 3/4 cup brown sugar
  • 1/2 cup vegetable oil
  • 1/4 cup milk
  • 1 tsp vanilla extract
  • 1/2 cup flour (for streusel)
  • 1/3 cup brown sugar (for streusel)
  • 4 tbsp cold butter (for streusel)

Instructions

  1. Preheat the oven to 350°F (175°C) and prepare your muffin tin.
  2. Mix the dry ingredients in a bowl: flour, baking soda, baking powder, salt, and pumpkin pie spice.
  3. Prepare the wet ingredients in another bowl: beat eggs and brown sugar, then add pumpkin puree, vegetable oil, milk, and vanilla extract.
  4. Combine the wet mixture with the dry ingredients, gently folding until just combined.
  5. Make the streusel by mixing flour, brown sugar, and cold butter until crumbly.
  6. Fill each muffin cup 2/3 full with batter and sprinkle streusel on top.
  7. Bake for 18-20 minutes or until a toothpick comes out clean.
  8. Cool the muffins in the tin for 5 minutes, then transfer to a wire rack.

Notes

Serve warm, optionally dusted with powdered sugar. Pairs well with coffee or tea.
