Healthy Zucchini Oatmeal Cookies

Delicious and healthy zucchini oatmeal cookies that are chewy and satisfying.

  • 1 cup rolled oats
  • 1 cup grated zucchini
  • 1/2 cup almond butter
  • 1/4 cup honey or maple syrup
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/4 cup dark chocolate chips or nuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare a baking sheet by lining it with parchment paper.
  3. Mix the rolled oats, baking soda, salt, and cinnamon in a large mixing bowl.
  4. Combine the grated zucchini, almond butter, honey (or maple syrup), and vanilla extract in another bowl until smooth and creamy.
  5. Gradually add the wet mixture into the dry mixture and stir until just combined.
  6. Scoop the dough onto the prepared baking sheet, leaving space between each cookie.
  7. Bake for 10-12 minutes until edges are lightly golden.
  8. Cool on the baking sheet for 5 minutes before transferring to a wire rack.

Notes

Ensure zucchini is well-drained to avoid excess moisture.
