Healthy Oatmeal Pumpkin Muffins

Wholesome and delicious oatmeal pumpkin muffins, perfect for breakfast or a snack.

Ingredients

  • 2 cups oat flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 2 tsp pumpkin pie spice
  • 2 eggs (or flax eggs)
  • 1 cup pumpkin puree
  • 1/2 cup maple syrup
  • 1/3 cup vegetable oil
  • 1/3 cup milk
  • 1 tsp vanilla extract
  • 1/2 cup rolled oats

Instructions

  1. Preheat the oven to 350°F (180°C).
  2. Mix the dry ingredients in a large bowl: oat flour, baking soda, baking powder, salt, and pumpkin pie spice.
  3. Combine the wet ingredients in another bowl: eggs (or flax eggs), pumpkin puree, maple syrup, vegetable oil, milk, and vanilla extract.
  4. Combine the wet mixture into the dry ingredients, stirring gently.
  5. Add the rolled oats, folding them in carefully.
  6. Scoop into prepared muffin tins about 2/3 full.
  7. Bake for 18-20 minutes until a toothpick comes out clean.
  8. Cool in the pan for 5 minutes, then transfer to a wire rack.

Notes

Store in an airtight container at room temperature for 2-3 days or freeze for up to 3 months.
