Banana Pumpkin Muffins

Delicious and fluffy Banana Pumpkin Muffins bursting with flavor, perfect for any time of day.

  • 1 3/4 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 2 tsp pumpkin pie spice
  • 2 large eggs
  • 1 cup pumpkin puree
  • 3/4 cup brown sugar
  • 1/2 cup vegetable oil
  • 1/4 cup milk
  • 1 tsp vanilla extract
  • 1 ripe banana, mashed

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare the muffin tin by lightly greasing or lining it with paper liners.
  3. Mix the dry ingredients in a medium bowl: all-purpose flour, baking soda, baking powder, salt, and pumpkin pie spice.
  4. Combine the wet ingredients in a large bowl: beat the eggs, then mix in the pumpkin puree, brown sugar, vegetable oil, milk, and vanilla extract.
  5. Add the mashed banana and fold it into the wet ingredients.
  6. Combine the wet and dry mixtures, folding them together until just combined.
  7. Fill the muffin tin with the batter, filling each cup about three-quarters full.
  8. Bake for about 18-20 minutes, or until a toothpick inserted comes out clean.
  9. Cool in the tin for 5 minutes before transferring to a wire rack to cool completely.

Notes

These muffins are wonderful warm with butter or topped with cream cheese frosting. Feel free to get creative with mix-ins like chocolate chips or nuts.
