  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 2 tsp pumpkin pie spice
  • 2 large eggs
  • 1 cup pumpkin puree
  • 3/4 cup brown sugar
  • 1/2 cup vegetable oil
  • 1/4 cup milk
  • 1 tsp vanilla extract
  • 1 1/2 tsp chai spice

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare the muffin tin by lining it with paper liners or greasing it lightly.
  3. Whisk together the flour, baking soda, baking powder, salt, pumpkin pie spice, and chai spice in a medium bowl.
  4. Mix in another bowl the eggs, pumpkin puree, brown sugar, vegetable oil, milk, and vanilla extract until smooth.
  5. Combine the dry ingredients with the wet mixture, folding gently until just combined.
  6. Scoop the batter into the muffin tin, filling each cup about two-thirds full.
  7. Bake for 18-22 minutes or until a toothpick comes out clean.
  8. Cool muffins in the tin for 5-10 minutes before transferring to a wire rack.
