Cinnamon Swirl Pumpkin Muffins

Deliciously moist muffins with a delightful cinnamon swirl, perfect for autumn mornings.

  • 1 3/4 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 2 tsp pumpkin pie spice
  • 2 large eggs
  • 1 cup pumpkin puree
  • 3/4 cup brown sugar
  • 1/2 cup vegetable oil
  • 1/4 cup milk
  • 1 tsp vanilla extract
  • 1/3 cup brown sugar (for cinnamon swirl)
  • 1 tbsp cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prep a muffin tin with cupcake liners or grease it.
  3. Mix together the flour, baking soda, baking powder, salt, and pumpkin pie spice in a large bowl.
  4. Gather the eggs, pumpkin puree, brown sugar, vegetable oil, milk, and vanilla in another bowl and whisk until smooth.
  5. Combine the wet mixture with the dry ingredients, folding gently until just combined.
  6. Make a cinnamon swirl mix by combining 1/3 cup brown sugar with cinnamon in a small bowl.
  7. Fill each muffin cup 2/3 full with batter, sprinkle cinnamon sugar on top, then dollop more batter and swirl gently with a toothpick.
  8. Bake in the oven for about 18-20 minutes or until a toothpick comes out clean.
  9. Cool in the tin for about 5 minutes before transferring to a wire rack.

Notes

These muffins can be frozen. Make sure they are completely cooled before placing them in an airtight container.
