Cream Cheese Swirl Pumpkin Muffins

  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 2 tsp pumpkin pie spice
  • 2 large eggs
  • 1 cup pumpkin puree
  • 3/4 cup brown sugar
  • 1/2 cup vegetable oil
  • 1/4 cup milk
  • 1 tsp vanilla extract
  • 8 oz cream cheese
  • 1/4 cup sugar
  • 1 egg (for cream cheese mixture)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease lightly.
  2. Mix the flour, baking soda, baking powder, salt, and pumpkin pie spice in a medium bowl.
  3. Whisk together the eggs, pumpkin puree, brown sugar, vegetable oil, milk, and vanilla extract in another large bowl until smooth.
  4. Combine the dry ingredients into the wet mixture, stirring gently until just combined.
  5. Prepare the cream cheese mixture by blending the cream cheese, sugar, and egg until smooth.
  6. Fill each muffin cup with a heaping tablespoon of the muffin batter.
  7. Add a generous dollop of the cream cheese mixture on top of the batter in each muffin cup.
  8. Top with more muffin batter to cover the cream cheese swirl.
  9. Bake for about 18 to 22 minutes or until a toothpick comes out clean.
  10. Cool in the tin for about 10 minutes before transferring them to a wire rack.

Notes

These muffins freeze beautifully. Store in an airtight container for up to three months. Try adding chocolate chips or nuts for variations.
