Maple Glazed Pumpkin Muffins

  • 1 3/4 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 2 tsp pumpkin pie spice
  • 2 large eggs
  • 1 cup pumpkin puree
  • 3/4 cup brown sugar
  • 1/2 cup vegetable oil
  • 1/4 cup milk
  • 1 tsp vanilla extract
  • 1 cup powdered sugar
  • 2 tbsp maple syrup
  • 1 tbsp milk

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare a muffin tin by greasing it or lining it with paper cups.
  3. Mix your dry ingredients in a large mixing bowl: flour, baking soda, baking powder, salt, and pumpkin pie spice.
  4. Combine wet ingredients in another bowl: beat eggs, pumpkin puree, brown sugar, vegetable oil, milk, and vanilla extract.
  5. Combine dry and wet ingredients together until just mixed.
  6. Fill muffin cups about 2/3 full.
  7. Bake for 18-22 minutes or until a toothpick comes out clean.
  8. Cool in the pan for 5 minutes before transferring to a wire rack.
  9. Prepare the maple glaze by whisking powdered sugar, maple syrup, and milk until smooth.
  10. Glaze cooled muffins, letting the glaze soak in.
