Maple Pumpkin Muffins

Deliciously spiced Maple Pumpkin Muffins that embody the cozy flavors of autumn.

  • 1 3/4 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 2 tsp pumpkin pie spice
  • 2 large eggs
  • 1 cup pumpkin puree
  • 3/4 cup brown sugar
  • 1/2 cup vegetable oil
  • 1/4 cup milk
  • 1 tsp vanilla extract
  • 1/3 cup maple syrup

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a muffin tin with liners or grease it lightly.
  2. Whisk together the flour, baking soda, baking powder, salt, and pumpkin pie spice in a medium bowl.
  3. Combine the pumpkin puree, brown sugar, and maple syrup in a large bowl; mix until smooth, then add the eggs, vegetable oil, milk, and vanilla extract.
  4. Add the dry ingredients to the wet mixture and stir gently until just combined.
  5. Spoon the batter into the prepared muffin tin, filling each cup about two-thirds full.
  6. Bake for 20-25 minutes or until a toothpick inserted comes out clean.
  7. Cool the muffins in the pan for 5 minutes before transferring to a wire rack.

Notes

These muffins are best enjoyed warm with butter or syrup. They freeze well; just wrap them individually and store in a freezer bag.
