One-Bowl Pumpkin Muffins

  • 1 3/4 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 2 tsp pumpkin pie spice
  • 2 large eggs
  • 1 cup pumpkin puree
  • 3/4 cup brown sugar
  • 1/2 cup vegetable oil
  • 1/4 cup milk
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Mix together the flour, baking soda, baking powder, salt, and pumpkin pie spice in a mixing bowl.
  3. Add the eggs, pumpkin puree, brown sugar, oil, milk, and vanilla extract to the dry mix and whisk until just combined.
  4. Scoop the batter into muffin tins, filling each cup about 2/3 full.
  5. Bake for about 18-22 minutes, or until a toothpick inserted into the center comes out clean.
  6. Cool in the pan for 5 minutes before transferring to a wire rack.

Notes

For a vegan option, substitute eggs with 1/2 cup unsweetened applesauce. Serve with whipped cream cheese or alongside coffee.
