Naturally Sweetened Pumpkin Muffins

Moist and flavorful pumpkin muffins, naturally sweetened for a healthier treat perfect for fall.

Ingredients

  • 1 3/4 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 2 tsp pumpkin pie spice
  • 2 large eggs
  • 1 cup pumpkin puree
  • 3/4 cup brown sugar
  • 1/2 cup vegetable oil
  • 1/4 cup milk
  • 1 tsp vanilla extract
  • 1/2 cup maple syrup
  • 1/3 cup unsweetened applesauce

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Mix your dry ingredients in a large bowl.
  3. Combine the wet ingredients in a separate bowl.
  4. Make a well in the dry ingredients and pour in the wet mixture.
  5. Fill the muffin tin with batter.
  6. Bake for 20-25 minutes until golden.
  7. Cool muffins in the tin for 5 minutes before transferring to a wire rack.

Notes

These muffins freeze well for up to 3 months. Feel free to add chocolate chips or nuts for variations.
