Bacon Pesto Potato Skillet

A deliciously simple yet utterly indulgent dish featuring crispy bacon and tender potatoes, generously coated in aromatic pesto.

Ingredients

  • 1 pound Yukon Gold or red potatoes, cut into 1-inch cubes
  • 46 slices bacon, chopped
  • ½ cup basil pesto
  • 2 tablespoons olive oil
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Prep the ingredients by washing and peeling the potatoes, then cutting them into 1-inch cubes.
  2. Cook the bacon in a large skillet over medium-high heat until crispy, about 4-5 minutes.
  3. Remove the bacon with a slotted spoon, leaving the drippings in the skillet.
  4. Add the chopped potatoes to the skillet, season with salt and pepper, and cook for 10-15 minutes until golden and crunchy.
  5. Stir the bacon back into the skillet with the potatoes.
  6. Add the pesto and mix until potatoes are well coated.
  7. Finish cooking for an additional 5 minutes; broil for 2-3 minutes for extra crunch if desired.
  8. Serve hot, garnished with fresh basil or a drizzle of olive oil.

Notes

Feel free to customize with additional veggies or cheese! Consider serving in individual bowls with a light salad on the side.
