Buffalo Cauliflower Mac

A delicious twist on traditional mac and cheese, featuring crispy buffalo cauliflower for an explosion of flavor.

  • 2 cups Elbow Macaroni
  • 1 medium head Cauliflower, cut into florets
  • 1/2 cup Buffalo Sauce
  • 2 cups Cheese Sauce, homemade or store-bought
  • 2 tbsp Olive Oil
  • Salt and Pepper, to taste

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Place cauliflower florets in a bowl and drizzle with olive oil, salt, and pepper. Toss to coat.
  3. Cook elbow macaroni according to package instructions until al dente. Drain and set aside.
  4. In a medium saucepan, melt butter over medium heat. Add flour and whisk for about a minute to create a roux.
  5. Gradually add milk, stirring continuously until the sauce thickens. Remove from heat and stir in cheese.
  6. In a large bowl, mix macaroni, roasted cauliflower, buffalo sauce, and cheese sauce until fully coated.
  7. Transfer the mixture to a greased baking dish and sprinkle with additional cheese. Bake for about 20 minutes until bubbly and golden.

Notes

Allow the dish to cool for a few minutes before serving. Consider topping with panko breadcrumbs for added crunch.
