Caprese Gnocchi Bake

A gooey, cheesy delight that combines fresh ingredients in a comforting pasta bake.

Ingredients

  • 1 lb gnocchi (fresh or store-bought)
  • 2 cups ripe grape or cherry tomatoes, halved
  • 8 oz fresh mozzarella, torn into chunks
  • 1/4 cup fresh basil, chopped
  • 2 tbsp extra virgin olive oil
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Cook the gnocchi in a large pot of salted boiling water according to package instructions, typically until they float (about 2-3 minutes).
  3. Prepare the tomato mixture by combining halved tomatoes, olive oil, salt, pepper, and chopped basil in a large mixing bowl.
  4. Combine the drained gnocchi with the tomato mixture, stirring gently to coat.
  5. Transfer the mixture to a greased baking dish and scatter the mozzarella on top.
  6. Bake for 20-25 minutes, until the mozzarella is bubbly and starting to brown.
  7. Optional: Switch your oven to broil for the last 2-3 minutes for a crispy top.

Notes

Serve hot, garnished with extra basil. Pair with a green salad or crusty bread.
