Cheeseburger Stuffed Potato Boats

A cozy dish that combines classic cheeseburger flavors with the charm of baked potato.

  • 4 medium to large russet potatoes
  • 1 lb lean ground beef
  • 1 cup sharp cheddar cheese, shredded
  • 1 tsp salt
  • 1/2 tsp freshly cracked black pepper
  • 2 tbsp butter
  • 2 green onions, chopped (optional)

Instructions

  1. Prep the potatoes by washing and drying them. Preheat your oven to 400°F (200°C).
  2. Bake the potatoes directly on the oven rack for 45-60 minutes until tender.
  3. Cook the ground beef in a skillet over medium heat until browned, seasoning with salt and pepper.
  4. Add half of the cheddar cheese to the beef mixture and stir until melted.
  5. Scoop out the insides of the baked potatoes, leaving about a quarter inch on the skin.
  6. Refill the potato skins with the beef and cheese mixture and top with remaining cheddar cheese.
  7. Finish by baking again for 10-15 minutes until cheese is melted and bubbly.
  8. Garnish with chopped green onions and optional toppings before serving.
