The Ultimate Chicken Bacon Pancake Melt

Ingredients

  • Pancakes
  • Cooked Chicken, shredded or sliced
  • Crispy Bacon
  • Cheese, such as cheddar or pepper jack
  • Maple Syrup
  • Fresh Herbs, like chives or parsley

Instructions

  1. Prepare the Pancakes: If you’re using a mix, follow the instructions on the box. If making from scratch, combine dry ingredients in one bowl and wet in another, then mix until just combined.
  2. Cook the Pancakes: Heat a non-stick skillet over medium heat, pour batter, and cook until bubbles form. Flip and cook until golden.
  3. Crisp Up the Bacon: Cook the bacon over medium heat until crispy, then drain on paper towels.
  4. Prepare the Chicken: If using leftovers, shred or slice the chicken, or grill fresh chicken with seasoning until done.
  5. Assemble the Melt: Top a pancake with chicken, bacon, and cheese; add another pancake on top and repeat for layers.
  6. Drizzle and Garnish: Pour maple syrup over the stack and sprinkle with fresh herbs.
