Chorizo Queso Rice

A vibrant and satisfying dish combining spicy chorizo with gooey queso and rice, perfect for family gatherings.

  • 1 lb chorizo (fresh or cured)
  • 2 cups long-grain white rice
  • 2 cups queso dip (or shredded Monterey Jack cheese)
  • 4 cups chicken broth (or vegetable broth)
  • 1 cup chopped bell peppers (optional)
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • Fresh cilantro (for garnish)

Instructions

  1. Sauté the chorizo: In a large skillet, heat over medium heat. Add in the chorizo and cook for about 5–7 minutes until browned and crispy.
  2. Add aromatics: Toss in the chopped onion and bell peppers into the skillet and sauté until the onions are translucent (about 3–4 minutes).
  3. Power up with garlic: Add the minced garlic and cook for an additional 30 seconds until fragrant.
  4. Cook the rice: Pour in the rice, stirring to coat with the flavorful oils. Toast the rice for about 2 minutes.
  5. Add the broth: Pour in the chicken broth, bring to a boil, then lower heat and cover. Let it simmer for about 15 minutes until the rice is cooked.
  6. Add the queso: Stir in the queso until fully incorporated. Adjust consistency with a splash of broth if necessary.
  7. Serve it up: Fluff the rice with a fork, top with fresh cilantro, and serve warm.

Notes

For serving, consider garnishing with extra queso, jalapeños, sliced avocado, or a dollop of sour cream.
